In a hydroponic set up, there is nothing acting as a buffer, and all the nutrients from fertilizers are easily absorbed by the plants. It is a general rule that EC and pH should never be lower then 5 and higher then 7, as the plant would not be able to absorb any nutrients.

In soil based gardens, there is never sufficient nutrient, which is why fertilizers are used in every soil garden.
